Silky and fruity — a 1930s classic.


  • 1 1/2 oz Victoria Gin
  • 3/4 oz Lemon Juice
  • 2 tsp Raspberry syrup
  • 1 Egg white
  • For syrup:
  • 2 cups Demerara sugar
  • 1 cup Water
  • 1 cup Raspberries


Combine ingredients in a shaker. Dry shake for at least 10 seconds. Add ice and wet shake for at least 10 seconds. Strain into a chilled glass.

For syrup: Combine sugar and water over low heat to dissolve sugar. Add fruit and stir until the berries fall apart. Strain and refrigerate.
