Created by Solomon Siegel, this drink is named after the local garbage dump in Victoria. But don’t let that put you off! The dump has been a hot spot for the local mountain biking community for ages. And the cocktail is easily one of our favourites.

Ingredients

  • 1 oz Victoria Gin
  • 1/2 oz Pear liqueur
  • 1/2 oz Amaro Montenegro
  • 1/2 oz Lemon Juice
  • 1-2 dash Grapefruit bitters
  • Top with Sparkling wine
  • twist Lemon

Method

Stir gin, pear, Amaro, lemon juice, and bitters with ice. Strain into a flute and top with sparkling wine. Garnish with a twist of lemon.
