Also know as the “Prince Reviver”, this vibrant cocktail was created by Q bar at the Fairmont Empress for Art of the Cocktail 2016.

Regal as anything, the colour really makes this drink stand out, but if your local herbalist doesn’t stock Indian blue pea flowers, the drink is as tasty without it.   If you are infusing your Cointreau, you can use the ISI Whip method,  or just soak a few flowers in a jar of Victoria Gin overnight.  And really, a few is enough, as a little goes a long way.  (As an aside, with a background in molecular biology, Peter, our Master Distiller was excited to discover that the flowers act as acid indicators.  The less acid in the liquid, the more vibrant the blue.   Good luck with your experiments!)

Ingredients

  • 1 oz Victoria Gin
  • 1 oz Cointreau infused with Indian Blue Pea Flower
  • 1 oz Lillet blanc
  • 3/4 oz Lemon Juice
  • 1 Egg white

Method

Combine ingredients in shaker. Dry shake.  Then add ice and  wet shake.  Strain and serve.
